Baked Avocado Egg with Bacon

Ingredients:

  • 1 ripe avocado
  • 2 eggs
  • 2-3 bacon rashersavocado-egg-boats-with-bacon2
  • Salt and pepper to taste
  • Parsley and/or corriander, chopped – to garnish


Method:

  1. Preheat oven to 220ºC.
  2. Cut avocado open length ways and remove the stone. Scoop out a little bit of avocado flesh from each half to make enough room for a whole egg to fit.
  3. Break an egg into each half and season with salt and pepper and any other seasonings you like.
  4. Bake in preheated oven on a baking dish for 15 mins or until eggs are cooked. Take care with avocado halves to avoid the egg spilling out.
  5. Grill or fry bacon rashers for several minutes until cooked.
  6. Sprinkle with fresh chopped parsley or corriander and serve.
