20 fresh mussels, well scrubed and de-bearded
3 Tbsp olive oil
6-8 garlic cloves, finely chopped
1 medium onion, finely chopped
1 can chopped tomatoes with juice or equivalent fresh ripe tomatoes, roughly chopped
½ cup dry white wine
2 Tbsp fresh basil, finely chopped for garnish
Salt and pepper to taste
- Heat oil over a medium heat and cook onion until soft, then add garlic and cook for another minute.
- Add tomatoes and wine and cook for a couple more minutes, stirring regularly. Season with salt and pepper to your taste.
- Make sure all the water is drained out of the mussels and add them to the pot. Steam for 3 to 4 minutes with the lid on or until the mussels have opened. Give the pot a good shake during steaming to allow flavour to mix with the mussels.
- Arrange mussels in serving bowl and spoon the sauce and basil garnish over the mussels. You can also add some parmesan for added flavour. Enjoy!
