170g strawberries (or other berries e.g. blackberries, blackcurrants)
1 vanilla bean pod
Stevia to taste
½ tsp vanilla extract
8 leaves of fresh mint for garnish
- In a bowl, combine stevia, vanilla extract and mascarpone with a fork.
- Open the vanilla pod and scrape the seeds into the mascarpone and mix well.
- Share out the berries into 8 small dessert bowls.
- Add a good dollop of mascarpone misture to the top of each bowl and garnish with mint.
TIP: for the best presentation, pipe mascarpone in a spiralled pattern on or next to the berries.
