Home > Articles > Vegetable FritataVegetable Fritata 29/07/2016 RecipesIngredients:Olive or coconut oil200g kumara, peeled and diced to 1cm pieces120g green beans, trimmed, halved½ cup frozen peas or sweet corn1 medium red onion, chopped1 medium zucchini, sliced thinly1 medium tomato, chopped2 tablespoons fresh parsley finely chopped½ cup milk (or rice/coconut/almond/oat milk)4 eggs, lightly whiskedSalt and pepper to season Method:Preheat oven to 180°C.Grease and line a 20cm deep baking dishHeat olive oil over a medium heat in a frying pan and lightly cook kumara for 3-5 minutes.Add the beans, peas/corn, onion and zucchini. Cook for another 3 minutes or until tender.Combine all vegetables and egg mixture in a large bowl.
