Beef Chilli Con Carne


2 small brown onions, finely chopped
2 carrots, chopped
2 sticks celery, sliced
2 Yellow capsicums, chopped
2 garlic cloves, finely chopped
500g beef mince
1 can (400g) red kidney beans, drained and rinsed
1 can (400g) chopped tomatoes
1 Tbsp tomato paste
1 tsp chilli powder
1 tsp ground cinnamon
1 tsp ground cumin
Salt and pepper to taste
2 Tbsp olive oil
1 Tbsp apple cider vinegar
For garnish: Choose from sour cream, plain yoghurt, grated cheese or fresh herbs (parsley or coriander)


  1. Heat olive oil in a large fry pan over a medium heat. Add the onion and garlic and sautee for several minutes or until softened. 2). Add the other vegetables, the spices and salt and pepper. Cook for a further few minutes or until vegetables soften.
  2. Add the mince and break up with a wooden spoon. Once slightly browned, add the tomatoes, beans, tomato paste and vinegar. Cover and simmer for 30-40 mins or until it has thickened. Make sure you stir it from time to during.
  3. Now you can prepare your rice, quinoa or other additions to the meal.

Serve with rice, quinoa or in a burrito. Top with your choice of sour cream, plain yoghurt, grated cheese or freshly chopped parsley or coriander.
