Mediterranean Tomato & Garlic Mussels


20 fresh mussels, well scrubed and de-bearded
3 Tbsp olive oil
6-8 garlic cloves, finely chopped
1 medium onion, finely chopped
1 can chopped tomatoes with juice or equivalent fresh ripe tomatoes, roughly chopped
½ cup dry white wine
2 Tbsp fresh basil, finely chopped for garnish
Salt and pepper to taste


  1. Heat oil over a medium heat and cook onion until soft, then add garlic and cook for another minute.
  2. Add tomatoes and wine and cook for a couple more minutes, stirring regularly. Season with salt and pepper to your taste.
  3. Make sure all the water is drained out of the mussels and add them to the pot. Steam for 3 to 4 minutes with the lid on or until the mussels have opened. Give the pot a good shake during steaming to allow flavour to mix with the mussels.
  4. Arrange mussels in serving bowl and spoon the sauce and basil garnish over the mussels. You can also add some parmesan for added flavour. Enjoy!
