Vegetable Fritata



  • Olive or coconut oil
  • 200g kumara, peeled and diced to 1cm pieces
  • 120g green beans, trimmed, halved
  • ½ cup frozen peas or sweet corn
  • 1 medium red onion, chopped
  • 1 medium zucchini, sliced thinly
  • 1 medium tomato, chopped
  • 2 tablespoons fresh parsley finely chopped
  • ½ cup milk (or rice/coconut/almond/oat milk)
  • 4 eggs, lightly whisked
  • Salt and pepper to season


  1. Preheat oven to 180°C.
  2. Grease and line a 20cm deep baking dish
  3. Heat olive oil over a medium heat in a frying pan and lightly cook kumara for 3-5 minutes.
  4. Add the beans, peas/corn, onion and zucchini. Cook for another 3 minutes or until tender.
  5. Combine all vegetables and egg mixture in a large bowl. Once well mixed, season with salt and pepper.
  6. Pour into baking dish and cook for 45 minutes or until cooked through.
  7. Let stand for a several minutes before cutting or taking out of the baking dish.
